Gobi Musallam - easy everyday recipe




Gobi Musallam is Mughlai recipe with a rich gravy and an exotic taste. This could be served for special occasion or just on a very regular day...it would make your day brighter for sure. I have made a pot method instead of the baking method and can be done in just less than half an hour.

Ingredients

To blanch the cauliflower

1 cauliflower - around 700 gms
1 tbsp salt

For the gravy

Butter - 1 tbsp
Ghee - 1 tbsp
Green Cardamom - 3 whole
Black Cardamom - 1 whole (optional)
Cumin seeds - 1/4 tsp
Bay leaf - 2 medium
Onions, very finely chopped - 2 large
Tomato paste from 2 medium tomatoes

Ginger - 3/4 inch
Garlic - 6 cloves
Green chillies - 2 medium

Red chilly powder - 3/4 tsp
Kashmiri Chilly powder - 3/4 tsp
Coriander powder - 1 1/2 tsp
Turmeric powder - 1/2 tsp
Garam Masala - 3/4 tsp
Salt to taste

Kasuri Methi - a large pinch (forget it if you dont have)

Thick curd - 150 ml
Cream or Milk - 150 ml

Coriander leaves chopped - 2 tbsp



Method

Boil water in a pan and add salt. Immerse the washed and cleaned cauliflower and let it blanch for 3 to 5 minutes. Remove from water and place it in a plate.

Heat a heavy bottom wide pan or a wide pressure cooker. Add butter and ghee. When partially melted add cardamom, cumin seeds and bay leaf. Once the aroma comes out add the onion and saute till translucent. Make a paste using ginger,garlic and green chilies and add to the pan. Saute well and then add all the powders - red chilly to garam masala and then add salt (blanched cauliflower already has salt in it, so salt is required only for the gravy. Add the tomato paste and let everything cook well. Add few teaspoons of water if need be. Once the gravy is fully done, turn to high heat and add the curd and stir vigorously....this is to prevent the gravy from curdling. Once the gravy looks nice and smooth add the cream / milk. If you have kasuri methi add it to. Check salt. Now add the blanched cauliflower and pour gravy from sides over the cauliflower. Cover and cook for 5 to 7 minutes. The gravy will thicken as it sits. You can check whether the cauliflower is fully cooked by poking the flower in the middle using a knife. Serve hot with rice or roti or bread. You can serve by cutting into florets as in the second image.

Royal Red Chilly Chicken Curry | a recipe adapted from Rajasthani 'Lal Maas'



This is a very easy recipe to make with the ultimate result being a succulent and delicious curry as you can see in the picture. The recipe uses whole spices and the heat from the spice is mellowed down by the addition of yoghurt / curd. The amount of heat in the curry can be adjusted to suit your taste by increasing or decreasing the amount of chilly powder while the quantity of other whole spices remain the same.

The dish is cooked with ghee and i did not use oil. It is good to pamper yourself with these traditional recipes and this would definitely make you feel lika a 'royal'. While cooking this chicken, the aroma was so exotic and i couldn't stop myself saying a wow. So, it is just to say that if you consume ghee once in a while it wont hurt or otherwise, indulge in this treat and you can merrily starve the next day ...he he he...


ingredients

1 medium sized chicken - 1200 to 1400 gms, cut into desired size pieces 

whole spices

i am writing the list of spices in the order which it has to go into the ghee

bay leaf - 2 small leaf, torn into 2
black cardamom - 3
green cardamom - 5
cinnamon stick - 1 inch stick, 2 pieces
cloves - 6
fennel seeds - 1 tsp
cumin seeds - 1/2 tsp
pepper corns - 1/2 tsp
kashmiri red chilly - 20(split it into two lengthwise using scissors to remove seeds and dust & give a quick wash)

other ingredients

ghee - 2 to 3 tbsp
onion - 2 
garlic - 16 cloves
ginger - 1 inch piece
turmeric - 1/2 tsp
chilly powder - 2 tsp (add more after tasting the curry half way through the cooking)
curd - 300 ml
salt to taste

I have seen the addition of coriander leaves in this recipe in many tv shows and i have prepared this recipe with and without it. I prefer not to add coriander leaves.


Prawn & Chicken Paella - A great alternative to Biryani



Paella is a Spanish rice preparation home to Valencia. The original recipe includes chicken and rabbit meat and other goodies available in the region, such snails. This recipe has been customized to use locally available ingredients such as pork, chicken, fresh prawns and few other veggies. As regards the herbs, you can use either fresh rosemary or dried rosemary. Since Paella rice is not available in Kochi, i have used good quality raw rice. Please avoid using Basmati rice, because the aroma can sometimes remind you of biryani.

ingredients

Fresh unpeeled prawns - 500 gms
Chicken Breast - 2 or 3 (the more the merrier), diced into small pieces as seen in the picture

Pork bits with fat, thinly sliced  - a handful (you can use bacon or pancetta)
Chilly powder or paprika - 2 tsp
White wine - 6 tbsp or Synthetic Vinegar - 1 1/2 tbsp
Carrots, diced - 2
Potato, diced - 1 small (optional)
Roughly chopped tomatoes - 2
Onion - 2 large, roughly chopped
Garlic - 15 small cloves (organic) or 10 plump cloves
Olive Oil or Vegetable Oil - 4 tbsp or more
Saffron - 1 generous pinch

Paella rice or raw rice - 4 cups (400 gms approximately)
Water - 8 cups

Salt to taste

chilly powder - 2 tsp (if you want mild heat use paprika)

Vessel to be used - A wide pan (Uruli) or a Paella pan

Salt: Since the marinated meat and prawn has salt, add salt to the rice cautiously

method

Clean the prawns and marinate it with 3/4 tsp chilly powder and salt. Marinate the chicken pieces separately with the remaining chilly powder and salt.

Rice: If you are using Paella rice, you can add it directly to the preparations. I always like to wash and dry the rice for sometime. In case you are using raw rice, wash it 3 times and then put in a flat plate, to get rid of the moisture.

Heat oil in a pan and sear the chicken (in medium heat). When it is almost done remove it from oil. Make sure the chicken is coated with the marinade ( as seen in the picture). Similarly, fry the prawns , for about 2 to 3 minutes. Remove from oil. At this point, drain all the caramelised bits of chicken and prawns. Let only the oil remain in the pan. Add the thinly sliced pork and turn the heat to low. Allow the pork to cook slowly and release all the fat. Once the pork has caramelised, gently move it to the side of the pan and add the onion and garlic and saute it in medium heat. When the sides of the onion and garlic start browning move it to the side of the pan and add the carrots and potato. Saute it for a minute. Now bring all the ingredients to the centre of the pan and add the cleaned rice. Fry it gently along with the veggies and meat for about 2 minutes using a wooden spatula (Take care not to break the rice). Add the wine or vinegar and the red chilly powder or paprika and salt. Give a mix and then spread it across the pan. Pour half of the water (4 cup), alongside the side of the pan. Do not stir. Place the rosemary sprigs in 4 different directions: NSWE :).

When the rice has absorbed the water, add 4 more cups of the water in the same fashion.
Sprinkle the saffron strands. When the rice is almost done, add the fried prawn and chicken and give a gently mix. Taste it. The rice will be done in few more minutes.

Please note , the consistency of the rice is 'just to the right bite'. It will have one bite when you chew it, but it will be done with a little bit of moisture (as you see above in the pic). If you want a more soft consistency just cover the pan, after turning of the heat. But the rice will bloat a little bit, it wont be thin as you see in the image.

Black Forest Ice Cream Cupcake - Eggless recipe


Hello All,

This is another sinful indulgence, you may like to prepare at home. A very easy recipe with home made iced cream rather than ice cream layered in a soft spongy eggless chocolate cup cake.

the recipe

maida / flour - 75 gms
powdered sugar - 75 gms
cocoa powder - 1 tbsp
baking soda - 1/3 tsp
baking powder - 1/3 tsp

yoghurt - 60 ml
vegetable oil - 30 ml
vanilla essence - 1/2 tsp

paper cupcake moulds - 12 (optional)

ingredients to assemble the cake

whipping cream - 100 ml
powdered sugar - 5 tbsp
vanilla essence - a drop
few chopped cherries
cooking chocolate or chocolate shavings

method

assembling the dry ingredients

Place a sieve on a bowl and sift together flour, sugar, cocoa powder, baking soda and baking powder.

Place the yoghurt (beaten), oil and vanilla essence in a bowl.

Preheat oven at 200C. Place paper moulds into muffin tins.

Add the dry ingredient mix into the wet ingredient bowl in 2 portions. Gently stir with a spoon till fully combined.

Pour 1 tbsp of the batter into the prepared moulds or into prepared muffin tins. The batter should be only half of the mould. Bake in the preheated oven at 200C for 10 to 12 minutes. You will get soft and spongy cupcakes as seen below.


Once the cake has cooled down to room temperature, place it in the refrigerator for at least 12 hours.

To assemble the cake, keep the whipping cream in the refrigerator (dont keep in the freezer). Once cold, use a chilled bowl, chilled balloon whisk to beat the cream. Pour the cream in the bowl and whisk it till soft peaks forms. Drop the one drop of essence and gradually add the powdered sugar. Freeze the mix for about 1 to 2 hours. I could wait only for one hour so the ice cream started running when i placed it on the chilled cake.



Cut the cupcake into 2 as seen above. I had added some apricots and almonds, because  initially i had no plans to ice this cake.

Place a dollop of ice cream on the lower half of the cake and  place the upper half on top and sprinkle the chopped cherries and then place a big dollop of ice cream on top. Once this is done for all the cupcakes, place it in the freezer for about ten minutes or else it will melt away. Take the cake out and use a peeler to shave the chocolate directly on the black forest ice cream cupcakes. Serve it immediately.

If you like to serve as seen in the first picture above, follow these steps.

Take a serving bowl and place a dollop of ice cream and then place the prepared black forest cupcakes. This would be more interesting because you can get to eat a lot of ice cream along with the cake.

Orange Caramel Custard | Make in advance Christmas Dessert



ingredients

Milk - 500 ml
Cream - 200 ml
Egg - 4
Sugar - 10 tbsp or to taste - taste after the eggs are added and just before pouring into the mould
Vanilla - 1 tsp

ingredients for the syrup

10 - 14 tbsp depending on the size of the mould to coat it thoroughly, otherwise the custard wont leave the pan after chilling
Orange juice - 4 tbsp



method 

Place the sugar and orange in a sauce pan over low to medium heat. Do not stir. Let the sugar gently caramelize. When the sugar has caramelized, pour it into a pan or mould of your choice and swirl it to coat the bottom of the pan and the sides. Keep it aside.

In the mean time boil milk and reserve. In another pan, heat the cream in a double boiler. When you see bubbles on the side turn off heat and mix it with the milk. Stir till it comes down to room temperature.

In another bowl, whist the eggs with sugar. Add vanilla extract and give a quick whisk.  Add the egg mix into the milk and strain it into another pan.

Pour this into the caramel coated pan and cover it with an aluminium foil or a thin steel or aluminium lid.

There are two ways of making the custard: Steaming or Baking.

Steaming: Prepare a double boiler and place the custard filled pan into it. The water level should be atleast half the height of the pan. Steam for 40 minutes.

Baking: Follow the same method as steaming to prepare the double boiler and place it in the oven at 160C for 45 to 50 minutes.

Once the custard is cooked, let it cool. Then place in a refrigerator for 6 hours or overnight. Invert the custard to see something which looks like the above.

Cut it and serve with the excess syrup.

Karimeen Pollichathu | Authentic Recipe


Karimeen Pollichathu


Karimeen Pollichathu is a famous fish-dish in Kerala, especially in the areas that have backwaters where pearlspots or karimeen is prevalent. The recipe below is medium spicy, which can be eaten by adults and kids. If you want a spicy version increase the quantity of chilly powder by 1 more teaspoon and the coriander powder by half a teaspoon.

the recipe

Karimeen or other soft fish fillet - 500 gms
salt and turmeric to marinate the fish
Oil to sear the fish

for the gravy

2 Onion or 15 Small onions
2-3 green chillies or 6 bird eye chillies (kanthari mulaku)
6 medium sized garlic cloves

Crush all the above ingredient in a mortar or just blend it in mixie for 5 -7 seconds

3/4 inch ginger - crushed (keep it separately)

turmeric powder - 1/4 tsp
chilly powder - 1 1/2 tsp
coriander powder - 1/2 - 3/4 tsp
pepper powder - 1/2 tsp

tomatoes - 3 medium

salt to taste
thick coconut milk - 125 ml (extracted from half a coconut)
coconut oil - 1 1/2 tbsp
curry leaf - 2 sprigs

Banana Leaf to wrap the fish - 2 , half portions

Method

Marinate the fish with salt and 1/4 tsp turmeric. Fry the fish quickly in Oil. It need not turn crispy. This is only for the protein to get sealed to the skin. Check the image below.




To make the sauce, you can use the oil left over from frying the fish. Heat the oil and add the crushed onion, garlic and chilly. Stir for a minute and add the crushed ginger. Add all the powders and stir for few seconds. Add the tomatoes and salt to taste. Let the tomatoes soften. Check salt and turn off heat.

I like to add the coconut milk into the banana leaf wrap, so that it cooks along with the fish and does not lose flavour from overcooking it...i mean cooking it twice.

Heat the banana leaf over fire. Place it in a pan.

I did not go the contemporary way of wrapping one fish in a parcel. Instead i used a method whereby you can save time.

Once the banana leaf is placed on a wide pan (an Uruli), pour half of the tomato sauce over it and 3/4th of the thick coconut milk, as seen in the picture below.



Place the fish as seen in the picture, place the remaining tomato mixture and drizzle some coconut oil. Place another banana leaf on top.



Customize your batch according to the size of the pan you are using Fold it in a manner that the juices do not run out of the wrap. Place heavy plate or spoon on the leaf. Pour a tablespoon of coconut oil on the side of the wrap. Close the pan / uruli with a lid. Place the pan on the stove and cook it in low flame for 15 minutes.

Once done, be prepared for the nice aroma of coconut milk, coconut oil and the fish pollichathu itself. Open the wrap carefully and serve the fish with rice, palappam or  soft idiyappam.

Orange Basbousa | Eggless Semolina Cake



Orange Basbousa


Basbousa can be best described as a dessert of Middle Eastern origin. Yes it is a dessert from a desert. It has variations in each country, especially those near the Mediterranean region and i have attempted to create a recipe of my own by making some variations in the syrup rather than in the cake itself.

This is my second attempt at baking a semolina cake. The first one was a Turkish Pistachio semolina cake. It tasted good but since i reduced the quantity of egg, it was not that soft. So i decided not to change the basbousa recipe and followed the ratio. Since this is the first attempt at basbousa i tried with small portions. The actual syrup recipe has sugar and few drops of lime. But for the syrup i followed the syrup in the Turkish recipe. This is one of the desserts i would call it 'divine'. Sorry for the bad picture above.....i was in a hurry and couldn't make it good diamond shapes, i should have at least cut in squares...




You can keep a ratio of the ingredients, so that you need not write down the recipe all the time. Here the ratio is 200 gms of semolina (rava), 200 gm sugar (in total) and 200 ml liquid (yogurt + oil), 200 mls syrup (100 ml orange juice and 100ml water) ...isnt that easy..

ingredients for the cake

fine semolina - 200 gms (you can blend regular rava / semolina in mixie for 5 seconds)
caster sugar - 100 gms
Yogurt  - 100 ml
Vegetable oil - 100 ml (the orginal recipe has 100 gm melted butter)
Vanilla extract - 1 tsp
Baking powder - 3/4 tsp
Rind of 1 orange (optional)
Almonds and pistachios - 1 for each piece

for the syrup

sugar - 100
fresh orange juice - 100 ml
water - 100 ml
rosewater (optional) - 3 drops
Rind of 1 orange

the method

Place the sugar, yogurt, vegetable oil, vanilla and rind of orange in a bowl and mix well until the sugar is fully dissolved. Add the semolina and baking powder and mix well with a spoon or your hand. The mixture will be slightly water. Leave it aside for 30 minutes.

Meanwhile, place all the ingredients for the syrup in a saucepan and bring it to a boil in medium heat. Let it boil for 5 minutes. Turn off heat and let it cool.

Grease a baking tray with butter or oil. Once the semolina mixture has rested for 30 minutes, give a quick mix again and place it in the baking tray and smoothen the top to level it. Cut it into desired shape and place the alomonds on each piece. I sprinkled the pistachios. Bake it at 180C for 30 - 35 minutes until the top of the cake turns golden brown.

Take it out of the oven. Pour the cool syrup on the hot cake. Serve warm. You'll love it. This is totally different from the Indian sooji ka halwa aka Rava Kesari

Scandinavian Rosette Cookies - Achappam with Maida



Christmas is just over ..... but my hang over is still on. Out of the various snacks i prepared, i just left out Achappam. I just think it is difficult and i keep on postponing. This time i took the Rosette iron from my mother in law and was searching for the recipe. The proportion should be correct, otherwise, the batter wont leave the iron. That is when i came across the European version which used flour / maida instead of rice flour. Since Achappam requires fresh rice flour you dont have any short cut using store bought roasted rice flour. So the Scandinavian version was just right for the lazy me. I tried it today and the first one was a flop. I think i overheated the iron before dipping it in batter. Rest is what you see in the picture. 

This is just another reason i would like to say never  give up. Even if you follow a recipe strictly, sometimes we should use our intuition and logic to get it right. Not for just recipes, but everything in life - I believe.

You can prepare these rosette cookies if you have a rosette iron. If you  dont have one, use a cookie cutter of any shape (star, flower, heart, rounds, ovals, etc) and hold it with a tweezer.



ingredients for the rosette cookies

flour / maida - 150 gms
egg - 1 large
milk - 150 ml + 25 ml if need be
vanilla essence or rose essence - 3/4 tsp
salt - 1/4 tsp
sugar - 1  tsp
vegetable oil for frying

ingredients for dusting

sugar - 4 tbsp
cinnamon powder - 1/2 tsp

method

Take a narrow bowl. Just wide enough to dip the rosette iron / mould. Place the egg, salt and sugar in it and whisk. Add milk little by little until all milk is used. Add the flour little by little as done for a pancake until the flour is fully used. Add the essence.  I used rose essence. You can  use according to your choice. Place the batter in the refrigerator for 15 minutes.

Heat oil in a deep pan. When hot, place the iron in the oil. Make sure the iron is moist free, otherwise you can see some explosions. When the iron is medium hot, say 1-2 minutes, lift it from oil, shake off excess oil   and place it in the batter, such a way that the batter does not cover the top of the iron. (If it is covered the cookies wouldnt leave the iron while frying). Place the iron covered with batter in the oil and gently shake it continuously. Also, use a broad knife to help the rosette cookie leave the iron. Gently slide it away from the iron. Do the entire process in low to medium heat, otherwise, the cookies will turn dark. Once the rosette is golden brown drain it from oil. Repeat the process. You may not be able to use all the batter to prepare cookies because the batter needs some elevation to coat the iron. Use up the balance batter by spooning it into oil.

For the dusting - Place the sugar and cinnamon in a mixer and powder it. Place the sugar mix in a sieve and dust it generously or as per your taste.




Fish Mappas - Karimeen Mappas

Mappas is a vinegar infused coconut milk curry prepared with fish or meat as the main ingredient. Meat or fish is first seared to seal the proteins and then it is cooked in the gravy to make it more flavorful and firm.

Duck mappas is the famous among all meat mappas while karimeen mappas is the famous within the fish circle. Mappas can be prepared using any other soft flesh whole fish like pomfret (akoli or maachan) or using fish fillets from sear fish or red snapper. The gravy is a really tasty one even without fish. So you can use your freestyle method to use this recipe with anyother ingredient like paneer, potato or soya chunks - Vegetarians, hope you hear me.

salt - 1/4 tsp
turmeric - 1 large pinch
oil - to sear the fish

for the gravy

3 tbsp coconut oil or vegetable oil
15-20 small onions / shallots, thinly sliced
2 green chilly, slit
2 sprigs curry leaves
turmeric - 1/3 tsp
chilly powder - 2 tsp
pepper powder - 1 tsp
coriander powder - 3/4 - 1 tsp 
2-3 tomatoes - cut into rounds (as seen in picture)
Coconut milk (1st extract) - 3/4 cup (use 3/4th of a large coconut or 1 coconut) - the gravy has to be thick
Coconut milk (2nd extract) - 1 cup
vinegar - 3 tbsp
salt to taste

ingredients for the recipe

oil - to sear the fish

3 tbsp coconut oil or vegetable oil
15-20 small onions / shallots, thinly sliced
2 green chilly, slit
2 sprigs curry leaves
turmeric - 1/3 tsp
chilly powder - 2 tsp
pepper powder - 1 tsp
coriander powder - 3/4 - 1 tsp 
2-3 tomatoes - cut into rounds (as seen in picture)
Coconut milk (1st extract) - 3/4 cup (use 3/4th of a large coconut or 1 coconut) - the gravy has to be thick
Coconut milk (2nd extract) - 1 cup
vinegar - 3 tbsp
salt to taste

method to prepare fish mappas

Step 1 - Sear the fish

Mix the salt and turmeric and rub it on the fish. Keep it aside for 5 minutes. Heat oil in a pan and place one fish at a time. The pan and oil should be very hot (take care while placing the fish). Sear it for one minute on one side and try to lift the fish using a spatula. Dont force the fish to come out. Since it is on high heat, the fish will leave the pan once it is seared. Turn the fish and sear the other side also and remove from pan. Repeat the same process with the remaining fish.

Step 2 - Preparing the fish mappas

Heat 3 tbsp oil in an earthern pot. Add the shallots and green chillies and stir till translucent. Add curry leaves, turmeric, chilly and coriander powder. Stir in low flame till the raw smell is gone and the spice powder sizzle. Add the tomatoes and gently stir till soft. Try to retain the round shape so that you can use it to garnish the mappas.

Prepare this recipe in low to medium flame. Slow cooking bring out the flavours of all the ingredients and it also results in a thick gravy.

When the tomatoes are soft add vinegar and salt. Give a gentle stir and cook till vinegar is fully incorporated into the masala. This also prevents the coconut milk from curdling. Add the second extract of coconut milk and bring it to a boil. At this stage you can add the pepper powder. Simmer it for 5 minutes.

Add the seared fish and cook till done. Check salt and taste. Turn to low heat and add the first extract of coconut milk. Lift the pan by holding it on two sides and gently shake it, so that you dont distrub the fish. It is after all basking in mappas glory. Do not let the curry boil after adding the first extract of coconut milk. Lift and gently swirly the pan again so that coconut milk is evenly distributed. Turn off heat and cover it with a lid. Serve after half an hour.

This is a mildly spiced curry. If you are preparing a meat mappas, say duck mappas, beef mappas, chicken mappas or a mutton mappas just avoid using tomatoes, instead, add 3 more tbsps of vinegar and 2 large onions more.

Phirni - a rice dessert

I prepared Phirni and was determined to post it today itself. As always, the photo session was a very hurry one. I thought i could convert the video into photo.  I couldn't. So you may have to click on it to view.

Phirni is a thickened rice dessert with a nutty flavour from the almonds and pistachios.


 


the recipe

Milk - 300 ml
Rice flour (Idiyappam flour) - 3 tsp or 3tbsp raw rice soaked & ground to paste
Sugar - 3 heaped tbsp + extra if u need
Rose essence - 2 drops or Rose water - 1 tsp
Cardamom - 3
Pistachios and Almonds - 15 each slivered
Rose petals - optional
Water - 3 - 5 tbsp

the method

Make a paste by mixing the rice flour and water. Heat milk in low flame and add the rice paste and mix well. Stir continuously in low flame till the rice flour is fully incorporated with milk. Taste it. When milk turns to a thickened consistency, like a condensed milk, add sugar, cardamom powder and rose essence. Continue stirring. Taste it. If you need more sugar add it. Add 3/4th of the slivered nuts and stir and taste it to check whether the rice flour is fully cooked. Turn off heat. Continue stirring to prevent the formation of lumps. When warm, spoon the phirni into pudding / dessert bowls. Cover and chill for 1 to 2 hours. Take it out of the refrigerator and garnish with remaining nuts and rose petals.

This is a very simple recipe. Make sure you keep all the ingredients and serving bowls ready before you start the preparation.

Wattalappam - Srilankan Coconut Cream Custard






Wattalappam is a Srilankan dessert prepared using coconut milk & jaggery which is a regional take on the basic milk-egg custard. The sugar that gives sweetness to the traditional custard is replaced by jaggery / palm sugar that gives a nice concoction like flavor. Wattalappam is spiced with nutmeg instead of the usual vanilla.  

I have been reading  Wattalappam recipes from various sources for quite a number of years but the number of eggs made me dizzy.  All the recipes I  have come across for the pass 4 or 5 years have had 10 eggs. I came to know about Wattalappam from a television program in which also, the person adds 10 eggs.  

I knew i had to find an alternative by adding some thickening agent. Then I decided to reduce the liquid content so that I would require only lesser number of eggs. Finally I reworked everything and came up with this recipe which has just two eggs.


You can serve 8 -10 people moderately or just 8 scrumptiously or just four generously…

I prepared one bowl  full (in picture) plus 4 ramekin sized cups. Serve Wattalappam with fruits or nuts to make it more filling. We had it plain.


The old recipes I read had only nutmeg as a spice. Recently I saw the addition of more different types of spices like, cardamom, cinnamon or a combination. I guess nutmeg is traditional ingredient and so i have added only nutmeg. The custard is very good, wobbly, velvety and had a melt in the mouth consistency.


the recipe

eggs - 2
jaggery - 200 gms
cream - 100 mil
hot milk - 100 ml
coconut - half of a medium sized one
nutmeg - 1/3 of  a whole nut

I coated the bowl with jaggery so that it is easy to get it out once it is chilled and it is more sweet with that extra syrup.

Step: 1 - Extract the coconut milk - Grate the coconut or cut the coconut into chunks and put it in a mixer jar and run it for few seconds. Pour the hot milk. Grind the coconut till soft. Pour it through a sieve and extract coconut milk. Keep it aside. (do not add more water)

Step: 2 - Melt the jaggery with 1 tbsp water and strain it to get rid of any impurities.

Step: 3 - Pour the coconut milk into the melted jaggery and mix quickly. If it tends to form lumps, heat it in low flame till the jaggery melts.

Step: 4 - Lightly beat the eggs in a bowl.

Step:5 - Pour a 2 tablespoons of the coconut-jaggery mix into the eggs to temper the eggs. Tempering means stabilizing the temperature otherwise the eggs will curdle. Once it is mixed pour the egg mix into the coconut-jaggery mix and stir well.

Step: 6 - Grate the nutmeg into the custard.

Step: 7 - Strain the whole mix.

Pour into a bowl coated with jaggery and steam it for 20 - 25 minutes. Make sure half of the bowl is immersed in water.

 Let it cool at room temperature. Chill it in the refrigerator for an hour or more and serve. Steaming time differs with quantity.

This pudding can also be baked by placing it in a water bath ( by placing the wattalappam bowl on another bowl half filled with hot water).

Simple Flavourful Semiya Payasam (without condensed milk)


All the luxuries in life need not be reaally luxurious. I just wanted to say that you can enjoy gourmet food without the oomph ingredient which in this recipe is the condensed milk. 

We were not at home this Onam and i just couldn't manage myself without preparing a payasam, though i had few varieties of payasam during the Onam celebrations at my office. Coming to condensed milk, it is not an ingredient which i usually store. Because it cannot be stored for more than a day especially if the can  has been opened once. There is one thing you need to be careful with the tin. In our violent urge to lick the last bit of condensed milk left in the tin it is usual that we try to wipe it with our finger. But if the rim / seal of the tin extents out even a little bit, it is very likely that we get injured. Well, i have got injured that way and got a deep wound in my pointing finger. 

This was a quickfix Vermicelli payasam which i prepared after returning from office (bcoz) i couldnt wait till the next weekend. The sun was setting and i tried to get the last bit of sunlight and there you can see the shadow of our window in the photograph.

The recipe is simple. Preparation & Cooking time - 20 minutes. Serves four sumptuously.

ingredients

Use the same cup to measure the ingredients - the right proportion yields best results

Vermicelli / Semiya - 1 cup
Sugar - 1 cup
Milk - 3 cup (2 1/2 + 1/2)
Water - 1/3 cup
Cashewnutes - a handful
Raisins - 3-4 tbsp
Cardamom - 6-8 medium sized, peeled
Ghee - 1 1/2 tbsp




the method

Heat a sauce pan in medium heat and add ghee. Fry the cashewnuts and raisins and keep it aside. To the remaining ghee add the vermicelli and stir till the vermicelli starts to turn golden brown.

Add water and half cup milk and let the semiya cook (about 7 minutes). Stir continuously to avoid the mixture from forming a layer on top. Cook in medium heat continuously.

Semiya / Vermicelli is a kind of pasta. The normal cooking time for all types of pasta is 9 minutes. Vermicelli is stirred in ghee to make it non stick and to prevent it from turning mushy.

When the vermicelli has been cooking for seven minutes add the remaining milk. Continue stirring. You can keep your eye off to grab other ingredient. That much time the payasam can hold without you :-)

I like to powder the cardamom with sugar bcoz i dont store cardamom in powder form. Put the sugar and cardamom in a mixie jar. I mentioned flavorful in the name for a reason. When you powder the sugar and cardamom you can add few fried nuts also to bring in that added flavour. Put it in the mixie for, say, 5 - 8 seconds. Add the sugar to the semiya mixture. Stir well and let it boil for 1 or 2 minutes. Add the friend cashew nuts and raisins. Serve at room temperature.

The Semiya Payasam has a not so thick not so runny consistency.

Kabuli Chana / Chole Biryani with Caramelized Vegetables




ingredients to prepare the caramelized vegetables
2 medium carrots, cut into juliennes as seen in the picture
2 large onions, cut into juliennes
1 medium cauliflower, separated into florets as seen in the picture
salt to taste
oil to fry

ingredients to prepare the rice

basmati rice - 2 cups (to serve 4)
water as needed
cardamom - 4
star anise - 1
cinnamon - 1 inch stick
cloves - 3 or 4
oil - 1 tbsp
salt to taste

ingredients to prepare the chole

3/4 cup or 1/2 cup (use as much as you need) Kabuli Chana, soaked overnight and cooked with salt

onion - 1, chopped
ginger - 1/2 inch piece, crushed
garlic - 4 cloves , crushed
curd - 4 tbsp
cumin powder - 3/4 tsp
coriander powder - 1 level tsp
garam masala - 1 tsp
chilly powder - 1 1/2 tsp
turmeric powder - 1/3 tsp
oil - 2 tbsp


ingredients for layering

coriander leaves - chopped with hands - 5 - 6 sprigs
mint leaves - 5 -6 sprigs
ghee - 1 or 2 tbsp




the method

1. Caramelized vegetables

Heat oil in a pan and deep fry the onions first. then deep fry the carrots, followed by the cauliflowers. While frying the vegetables sprinkle one or two pinch salt. Reserve the fried vegetables.

2.To cook the rice

Wash the rice and soak it for about 15 minutes. Boil adequate water with the spices and add the rice and salt to taste. When almost done add the oil and lemon juice. Drain and reserve the rice.
3. To prepare the chole, heat oil in a pan and saute the onion till golden brown. Add the ginger, garlic and all the spice powders. Saute for a minute and add the cooked Kabuli chana and stir well. Add the curd, stir for a while and then turn off heat.

4. Take heavy bottom pan and pour 1 tbsp ghee. Place a layer of rice and sprinkle the coriander and mint leaves. Spoon a layer of chole. Place another layer of rice and sprinkle the coriander and mint leaves and place a layer of chole. Repeat till the rice and curry is fully used up.

Layer the caramelized vegetables on top. Cover the pan and place in low flame for about 5 to 10 minutes. Serve with onion raita or a pomegranate raita.

Since the chana itself has a nutty flavor i did not add fried cashewnuts and the caramelized veggies was enough to give the sweetness which would have otherwise been given by fried raisins.


Dates & Vermicelli Payasam


A very easy Payasam recipe for  festive or normal days


the recipe

Dates – 15
Water – 200 ml
Vermicelli – ½ cup
Water – 100 ml
Milk – 100 + 300 ml
Sugar – 4 tbsp
Ghee – 1 tbsp
Almonds & Cashewnuts – ½ cup
ingredients to be powdered

Cardamom – 5
Cumin – 2 pinch
Dry Ginger Powder – ½ tsp or 1/3rd inch piece

The combination of cardamom, cumin and dry ginger powder is used to balance the sweetness from the dates.
the method

Deseed and chop the dates and cook it in water till mushy. Once the dates are cooked, stir it well to form the consistency of a pulp. Keep it aside.

Heat ghee in a saucepan and fry the cashewnuts and almonds. Drain the nuts and keep it aside. Saute the vermicelli in the remaining ghee and add 100 ml water and 100 ml milk and let the vermicelli cook. Once done add the remaining milk, cooked dates, sugar and fried nuts. Powder the cardamom, cumin and dry ginger with about 1 tsp sugar and add it to the payasam. Stir well and serve hot.

Saffron Sago Badami Kheer


I wanted to start this New Year on a sweet note and found the Vermicelli Badam Kheer at Sreevalli’s Ammaji Recipes


She had given an option of substituting the vermicelli with sago. Since vermicelli kheer / payasam is an usual version I have prepared the kheer using sago.

the recipe

Sago / Jowari – 4 tbsp, soaked for 1 – 1 ½ hours

Sugar – to taste

Cardamom - seeds from 5 cardamom, powdered

Milk – 300 ml

Almonds / Badam – 20 nos soaked in hot water, peeled and ground to paste

Saffron – 1 generous pinch

Few almonds to garnish



the method


Wash the soaked sago / jowary thrice. Cook the sago with 100 ml water. When it is almost done add the milk and almond paste and cook in medium flame. When the milk starts bubbling add the saffron strands and sugar and keep stirring for about 5 minutes. The kheer will begin to thicken slowly. Add the powdered cardamom and check sweetness. Add more sugar if need be. Turn off heat.
Serve after 5 – 10 minutes garnished with few almond slivers and saffron strands.


Fish Cutlet - - - - -lightly spiced



This is a recipe which you can prepare and freeze and fry it whenever you need. The Fish Cutlet is slightly different from the usual ones (which I came across the web) bcause I have not added garam masala. I prefer to taste the taste of fish rather than lot of masala and the addition of ginger, garlic and coriander simply enhances the flavor.

The usually egg dip to coat is replaced with a rice flour dip to get a very crunchy texture. Try it and you’ll like it.

Use these fish cutlets as a starter or simply prepare a fish burger for lunch.

the recipe
Fish keema – 500 gms
Potato – 500 gms (boiled and finely mashed)

Oil – 2 tbsp
Onion – 1 large, finely chopped
Green chilly, finely chopped – 2 (deseeded would be better)
Garlic – 8 medium cloves, finely chopped or grated
Ginger – 1/3rd inch piece, finely chopped
Corianders leaves – leaves with only tender stem – 6 sprigs
Chilly powder – ½ tsp
Pepper powder – ½ tsp
Lemon juice / Vinegar – 1 tsp
Salt to taste

ingredients to coat the cutlet

Rice flour – 2 -3 tbsp - Coarse rice flour (the one used to make puttu)
Water – ½ cup
Bread Crumbs – as much as you need
Oil to shallow fry
Salt to taste
Pepper powder – ¼ tsp

Note: I have used fish keema to prepare this recipe. If you are preparing with fresh fish, clean the fish and boil it with ¼ inch ginger, 4 garlic cloves, turmeric and salt and just adequate water to immerse the fish. Separate the flesh from the skin and bones and mash it with a fork and then follow the method below.

the method

Heat 2 tbsp oil in a heavy bottom or non-stick pan. Stir in the onions and sauté till translucent. Add the green chilly, ginger and garlic and stir for few seconds. Add the chilly, turmeric and pepper powder. Sauté for a while and add the fish keema / mashed fish. Stir well in low flame till the fish turns dry. Pour the lemon juice and sprinkle the coriander. Sauté for few seconds and turn off heat. When the fish turns warm, add the mashed potatoes and mix well, preferable using a potato masher. Knead the mix into a dough. Take a table spoon of the mix and shape it into a cutlet. I used a cutlet mould and ended up with very large ones. You can shape it according to your preference. Shape all the potato – fish mix.

Mix the rice flour with about 10 tbsp water (the mix should not be very watery), salt and pepper powder. The rice flour batter should be solid enough / liquid enough to coat the cutlet. Dip each cutlet into the rice mix and then coat it with bread crumbs and keep it ready. To avoid the bread crumbs from leaving the cutlet, place it in the freezer for half an hour and then keep it at room temperature for 10 minutes and then shallow fry in a non-stick pan.

These cutlets can be stored in the refrigerator (freezer) in an air tight container for upto a month.

Pork Vindalho (Vindaloo)


Pork Vindalho is a much liked dish in Anglo-Indian homes, be it a Goan Anglo or a Fort Kochi Anglo. Tangy, yet delicate this is something worth trying!!

If you are not a pork eater, you can try this with beef.

Pork – 1 kg

Ingredients for the Mustard & Red Chilly paste 

 Dry Red Chillies (whole – Kashmiri chillies are better) – 25 – 30 or 3 tablespoon kashmiri chilly powder
 Mustard – 1 1/2 tbsp
 Cumin – ½ tsp
 Pepper corns – 1 tsp
 Cardamom – 3
 Cinnamon – 2 cm piece
 Cloves - 5
 Garlic – 12 – 15 cloves
 Ginger – 3 cm piece
 Shallots (small onion) – 12 – 15
 Vinegar – 4 tbsp
 Tomato - 1

 Oil – 1 tbsp
 Onion – 1
 Turmeric – ½ tsp
 Salt – 1 ½ tsp
 Sugar – ½ tsp

the method

 In a mixer, finely powder the red chillies, mustard, cumin, pepper, cardamom, cinnamon and cloves. Add ginger, garlic, shallots, vinegar and tomato to the powdered mixture and grind to a fine past by adding required amount of water. 

 Cut the pork into flat 4 x 6 cm pieces or any preferred shape. Marinate the pork with Mustard & Red Chilly paste and salt for at least an hour.

 In a pan, add oil. Stir in the onion till translucent and add the turmeric. Add the marinated pork. Cook till done. Add sugar just before turning off heat (Alternatively, the meat can be cooked in a pressure cooker for 7 whistle). Serve with rice or bread.

The addition of 1 tbsp brandy at the end would give a tasty twist to the Vindalho / Vindaloo. 

Souperoni


The name souperoni is nothing but the addition of macaroni in this lightly hot and tangy soup. The souperoni is perfect for a cold day and a nice way to make kids have soup.


the recipe
3 ripe tomatoes, blanched

1 large clove of garlic, chopped

1 tsp veg oil

½ tsp chilly powder

1 tsp soya sauce

1 tbsp tomato sauce

2 tbsp chopped spring onion

Salt to taste

½ tsp sugar

1 tsp corn flour diluted in 3 tbsp water

a handful of macaroni

¼ tsp white pepper or black pepper powder

the method

heat oil in a pan and stir the garlic till the raw smell goes off (the garlic should remain white), drain from the oil. Turn off heat. Place the sautéed garlic and blached and chopped tomatoes in a blender and grind to a fine paste (do not add water).
Heat the pan (in medium flame) with the remaining oil and add the chilly powder and macaroni. Saute for about 5 seconds and add the soya sauce, tomato sauce and sugar. Stir for few seconds and add the pureed tomatoes and salt. Stir well and let the mix boil. When the macaroni is almost cooked add the corn starch. Bring the souperoni to boil and spring the pepper powder and spring onions. Turn off heat and serve hot.
